Guacamole!

Ina Garten's recipe for a chunky, tasty guacamole.  I love the flavor and the texture.

4 ripe hass avocados (the dark skinned kind)
3 T. freshly squeezed lemon juice (1 lemon)
1/2 cup small diced red onion
1 large clove garlic, minced
1 medium tomato, seeded and diced
1 t. kosher salt
1/2 t. freshly ground pepper
Tortilla chips for serving

Cut the avocados in half, remove the pits and scoop out the flesh into a large bowl.  Add the lemon, onion, garlic and toss well.  Using a sharp paring knife, cut through the avocado in the bowl until it is finely diced.  Add the tomato and mix well.  Season to taste with the salt and pepper.  Serve with tortilla chips.

If you like a little kick, add 4 - 8 dashes of Tabasco sauce.


Heather loves this Cilantro-spiked Guacamole:
Combine one or two thin slices of jalapeno pepper with 1/4 cup fresh cilantro leaves (bottom of stems removed), 2 ripe avacados (pitted and peeled), 1/4 tsp. salt 1/2 tsp. ground cumin, the juice of one line, and 1/2 cup water in a food processor.  Pulse/Blend until smooth.  Mix in 3 tbsp. chopped white or red onion and serve with fresh veggies or baked tortillas chips for dipping
