Honey Butter

We had a dinner party with life time family friends in SLC and I was swooning over their honey butter.

So delicious and so easy to make.  Give this a try when regular honey on top won't do.

1 cup of butter
1/2 cup marshmallow cream
1/2 cup honey

Mix together - Enjoy

Orange Rolls

I'm surprised I haven't posted these.  I love orange rolls, and with fresh oj in the dough it's a winner and hard to mess up.  Shape how you want at the end, but I love the traditional knots and they do look impressive.  I think they last about a day so I'd freeze and unthaw if you want to eat days later or have excess, or add dough enhancer to your dough to extend their life.

These I got from Olivia's aunt Kris Coleman

INGREDIENTS:
1 pkg. yeast (1 T.)
1/4 cup water (dissolve yeast in water, add a couple Tbsp. sugar & let sit to help yeast.)
1 C. scalded milk, cool to luke warm (I usually put scalded milk in a smaller bowl, and set that bowl in a larger bowl of ice to cool down faster)
1/2 cup shortening
1/3 cup sugar
1 tsp. salt
2 eggs
2 tsp. grated orange peel (zest)
Juice of 1 orange (1/2 cup)
2 cups flour (plus 3-3.25 more cups)

GLAZE:
2 cups powdered sugar
2 tsp. orange peel
4 Tbsp. juice from orange
combine all - glaze ingredients brush on rolls

Combine all to yeast.  Stir until smooth.  Add 3-3.25 more cups of flour by kneading. (I use my bosch...)  Let Rise until it doubles in size - a few hours.
Then roll out dough and cut into 1 inch strips.  tie in knots (fun part)  Let Rise

Bake 350 for 10-12 minutes

Delicious hint of orange and fancy look

I love to make around Easter or Christmas, brunch, new baby etc. . . I usually double the recipe as it's always nice to have extras on hand to pass around/freeze etc.

Fettucine Carbonara - fast easy winner

When we have leftover ham I always make this dish.

best pic online I could find ~ This is my daughter Olivia's most requested meal as a child.  She loves fettucine and white sauces.

12 oz. package fettucine

1/2 cup butter or margarine

1/3 cup sliced green onions

1 small can mushrooms

8 oz. package of cream cheese

1 1/4 cup milk

1 1/2 cup julienne cut ham

1/2 cup parmesan cheese

Cook Fettucine noodles.  In a large sauce pan sauté mushrooms and onions in the butter for 5 minutes.  Add cream cheese  and milk. Continue stirring over medium heat until thickened.  Add ham and parmesan cheese.   Pour over the noodles and eat right away.

I believe it's called Carbonara since it's not a cream sauce but you use cream cheese and milk to create a thicker creamy sauce which comes together no fuss easy like, and tastes great.

Artichoke dip

My favorite.  I got from my HS pal and have not had another dip I like quite as much.  It's easy but packed with flavor and goodness & everyone enjoys.  So if in a crowd I would double the recipe, but put in separate baking dishes so it spreads out the dip.

Artichoke Dip

1 cup Mayo
1 small can green chilies, chopped
1 heaping cup of Monterey jack cheese grated
1/4 cup grated parmesean cheese
1 can artichoke hearts, plain, 13.75 oz. drain and chop (I put mine in pulse on food processor)

Bake 325 for 20 min. or until warm

Serve with tortilla chips, or other dipping foods of your choice
